摘 要:近年来,壳寡糖及其衍生物的抗氧化活性引起了人们的关注,且活性与其聚合度和乙酰化程度显著相关。壳寡糖体外抗氧化的效率可以从DPPH自由基的清除能力及还原能力中测定出来。本文通过对6种含硫氨基酸类壳寡糖衍生物进行体外抗氧化活性测定,分别测定其还原能力、DPPH自由基清除能力,综合评估各壳寡糖衍生物的抗氧化水平。在抗氧化实验中,衍生物的抗氧化能力均与浓度呈正相关。在还原能力实验中,半胱氨酸低分子壳寡糖的还原能力尤为突出,最高吸光度值可达0.959 Abs,在DPPH自由基的清除能力实验中,谷胱甘肽低分子壳寡糖的清除效果最好,最高清除率达97.59%。综合实验结果表明:含硫氨基酸类壳寡糖衍生物的整体清除能力比较突出,抗氧化活性较好,值得进一步研究。In recent years,the antioxidant activity of chitosan oligosaccharides and their derivatives has attracted much attention,and the activity is significantly related to their degree of polymerization and acetylation.The efficiency of chitosan oligosaccharides in vitro antioxidant can be determined by their ability to scavenge DPPH free radicals and their reducing ability.The in vitro antioxidant activities of 6 kinds of chitosan oligosaccharide derivatives containing sulfur amino acids were determined,and their reducing ability and DPPH free radical scavenging ability were measured respectively to comprehensively evaluate the antioxidant levels of each chitosan oligosaccharide derivative.In the antioxidant experiments,the antioxidant capacity of the derivatives was positively correlated with the concentration.In the reducing ability experiment,the reducing ability of cysteine low-molecular-weight chitosan oligosaccharides was particularly prominent,with the highest absorbance value reaching 0.959 Abs.In DPPH free radical scavenging ability experiment,glutathione low-molecular-weight chitosan oligosaccharides had the best scavenging effect,with the highest scavenging rate reaching 97.59%.The comprehensive experimental results showed that the overall scavenging ability of chitosan oligosaccharide derivatives containing sulfur amino acids was relatively prominent,and their antioxidant activity was good,which was worthy of further study.
