摘 要:该研究旨在比较梅州金绿现代农业发展有限公司自主培育的肉鸽品系S、M和D系,二系杂交组合[S(父本)×M(母本)](SM)及三系杂交组合[D(父本)×SM(母本)][D(SM)]屠宰性能、肉蛋品质的差异。该试验选用21日龄S、M、D、SM和D(SM)共5个群体,从每个群体随机选取40只乳鸽进行屠宰性能和肉质的测定,同时从每个群体中随机选取40枚鸽蛋进行蛋品质的测定。结果显示,屠宰性能方面:D系的胸肌率显著大于S、M、D(SM)(P<0.05),活重显著大于S系(P<0.05);D、SM的腹脂率显著大于M系(P<0.05)。肉质方面:SM的腿肌剪切力为5组中最小;D(SM)的胸肌pH值显著大于S系(P<0.05),腿肌pH值显著大于SM(P<0.05);D(SM)的胸肌肉色b^(*)值显著大于SM(P<0.05);D(SM)的胸肌滴水损失为5组中最小。蛋品质方面:D系的纵径显著大于S、SM(P<0.05),蛋黄重显著大于SM(P<0.05);D系的蛋黄色泽显著大于M、SM(P<0.05)。可见,D系的活重、脂腹率、纵径、蛋黄色泽和蛋黄重均优于其他组;SM与D(SM)均体现出了良好的生长速度、屠宰性能和肉蛋品质。The aim of this study is to compare differences in slaughtering performance,meat and egg quality of the S,M and D strains of meat pigeons independently bred by Meizhou Jinlv Modern Agriculture Development Co.,Ltd.,and their two-line hybrid combination[S(male)×M(female)](SM)and three-line hybrid combinations[D(male)×SM(female)][D(SM)].This experiment utilized five groups of 21-day-old squabs:S,M,D,SM,and D(SM).From each group,40 squabs were randomly selected for measurements of slaughter performance and meat quality,while 40 eggs from each group were randomly chosen for egg quality assessment.The results showed that in terms of slaughtering performance,the breast muscle rate of D strain was significantly higher than that of S,M and D(SM)(P<0.05),and it's live weight was significantly higher than that of S strain(P<0.05);the abdominal fat rate of D and SM was significantly higher than that of M strains(P<0.05);In terms of meat quality,the leg muscle shear force of SM was the smallest among the 5 groups;the pH value of breast muscle in D(SM)was significantly higher than that of S strain(P<0.05),and the pH value of leg muscle was significantly higher than that of SM(P<0.05);the b^(*)value of breast muscle in D(SM)was significantly higher than that of SM(P<0.05).The drip loss of breast muscle in D(SM)was the smallest among the 5 groups.In terms of egg quality,the vertical diameter of D strain was significantly greater than that of S and SM(P<0.05),and the yolk weight was significantly greater than that of SM(P<0.05);the yolk color of S、D strains was significantly greater than that of M、SM(P<0.05).It can be seen that the live weight,abdominal fat rate,vertical diameter,yolk color and yolk weight of D strain were better than those of other groups.Both SM and D(SM)showed good growth rate,slaughter performance,meat and egg quality.
