摘  要:本实验探究不同条件对栀子黄色素稳定性的影响,为栀子黄色素在储存、运输及应用提供参考依据。采用乙醇法从栀子中提取栀子黄色素,并通过测定440 nm波长下栀子黄色素的吸光度,分析了pH、温度、光照、金属离子、还原剂无水亚硫酸钠和氧化剂高碘酸钠对栀子黄色素稳定性的影响,同时对栀子黄色素在动物体内的肝毒性作用进行了观察,为栀子黄色素的储存、运输及应用上提供参考。通过实验可知,栀子黄色素在中性和弱碱性条件下稳定性较好,耐热性和抗还原性较好,对Zn^(2+)和Ca^(2+)具有较好的耐性;而耐光性和抗氧化性较差,对Fe^(3+)极不耐受。栀子黄色素的储存、运输和应用过程中应避免接触Fe^(3+)和强氧化剂,避光密闭保存;栀子黄色素对于肝脏毒性较小。This experiment explores the influence of different conditions on the stability of gardenia yellow pigment,providing a reference basis for the storage,transportation and application of gardenia yellow pigment.Gardenia yellow pigment was extracted from Gardenia jasminoides Ellis by ethanol method,and the effects of pH,temperature,light,metal ions,reducing agent anhydrous sodium sulfite and oxidant sodium periodate on the stability of gardenia yellow pigment were analyzed by measuring the absorbance of gardenia yellow pigment at 440 nm wavelength.At the same time,the hepatotoxicity of gardenia yellow pigment in animals was observed,which provided reference for the storage,transportation and application of gardenia yellow pigment.The experiment shows that gardenia yellow pigment has good stability,poor light resistance and good heat resistance in neutral and weakly alkaline conditions.Fe^(3+)has a strong destructive effect on gardenia yellow pigment,while Zn^(2+)and Ca^(2+)have little influence on gardenia yellow pigment.Gardenia yellow pigment also has certain anti-reduction ability,but its antioxidant ability is poor.The storage,transportation and application of gardenia yellow pigment should avoid contact with Fe^(3+)and strong oxidant,and keep it in a closed place in the dark.Gardenia yellow pigment is less toxic to liver.
