摘 要:薄膜防腐包装是解决水果和蔬菜在运输、储存和销售过程中腐烂问题的常用技术之一。但传统的石油基薄膜没有持久的抗菌性能,而且难以生物降解。本文采用壳聚糖和海藻酸钠作为膜原料,以纳米ZnO作为抗菌剂,采用逐层涂抹烘干的方法制备壳聚糖/海藻酸钠/纳米ZnO双层膜。结果表明,当纳米ZnO添加量为0.5%时,制得的壳聚糖/海藻酸钠/纳米ZnO双层膜具有良好的抗菌性能。此时,该双层膜的拉伸强度为11.89 MPa,断裂伸长率为9.42%,水蒸气透过率系数为5.35×10^(-12 )g∙cm/(cm^(2)∙Pa∙s),大肠杆菌和金黄色葡萄球菌的抑菌圈为(24.6±0.1)mm和(45.8±0.1)mm。可见,本研究制备的薄膜有望成为一种新型食品包装材料。Film anticorrosion packaging is a common technique used to address the problem of decay of fruits and vegetables during transport,storage,and marketing.However,traditional petroleum-based films lack long-lasting antimicrobial properties and are difficult to biodegrade.In this study,chitosan and sodium alginate were employed as the film raw materials,and nano-ZnO was utilized as the antimicrobial agent to prepare a chitosan/sodium alginate/nano-ZnO bilayer film via a layer-by-layer coating and drying method.The findings demonstrated that the prepared chitosan/sodium amount of nano ZnO was 0.5%.At this point,its tensile strength was 11.89 MPa,the alginate/nano-ZnO bilayer film exhibited satisfactory antimicrobial properties when the addition elongation at break was 9.42%,and the water vapour transmission coefficient was 5.35×10^(-12) g·cm/(cm^(2)·Pa·s).The inhibition zones for Escherichia coli and Staphylococcus aureus were found to be(24.6±0.1)mm and(45.8±0.1)mm,respectively.These results indicate that the prepared film has the potential to be a promising material for food packaging.
