摘 要:该研究深入探讨了中韩饮食文化在烹饪理念、时空编码和用餐礼仪等多个维度的差异。在烹饪理念方面,中国强调“火味”,注重火候的精准掌控,体现了对食材的深刻理解和技艺的传承;而韩国则强调“手味”,通过手工操作传递情感,体现了对食材的尊重和对传统的坚守。在时空编码上,中国饮食展现出时间的绵延性,体现了对用餐过程的重视;韩国饮食则注重空间的完型性,体现了对视觉美学的追求。在用餐行为上,中国饮食体现过程美学,强调与自然界的节律相协调;而韩国饮食则注重效率伦理,强调快速进食和高效利用时间,体现了对效率的追求。这些差异不仅反映了两国饮食文化的独特性,也揭示了各自社会文化的深层次特征。This study delves into the multidimensional differences in dietary cultures between China and South Korea,focusing on culinary concepts,temporal-spatial encoding,and dining etiquette.In terms of culinary concepts,China emphasizes"fire flavor",highlighting precise control over cooking techniques,reflecting a profound understanding of ingredients and the inheritance of culinary skills.In contrast,South Korea emphasizes"hand flavor,"conveying emotions through manual preparation,demonstrating respect for ingredients and adherence to tradition.Regarding temporal-spatial encoding,Chinese cuisine exhibits temporal continuity,emphasizing the dining process,while South Korean cuisine embodies spatial completeness,pursuing visual aesthetics.In dining behavior,Chinese cuisine reflects process aesthetics,harmonizing with the rhythms of nature,whereas South Korean cuisine embodies efficiency ethics,emphasizing quick eating and efficient time utilization,reflecting a pursuit of efficiency.These differences not only reflect the uniqueness of the two countries'dietary cultures but also reveal the deep-seated characteristics of their respective social cultures.
