摘 要:文章旨在研究樱桃渣(CR)对仔猪生长性能、血清生化指标及肉质品质的影响。试验将320头均重(19.79±0.73)kg的杜×长×大健康仔猪按体重随机分为4组,每组8个重复,每个重复10头,分为20~50、50~80和80~110 kg三个饲养阶段,各阶段试验日粮中分别添加0%、1%、2%和4%的CR,试验为期103 d。结果表明,2%和4%的CR组仔猪末重比对照组显著降低3.73%和4.51%(P<0.05),日增重显著降低4.91%和6.19%(P<0.05),料重比显著提高4.72%和5.70%(P<0.05)。2%和4%的CR组背最长肌L*值、剪切力显著提升(P<0.05),大理石花纹评分、粗脂肪含量显著下降(P<0.05),1%~4%的CR组a*值显著下降(P<0.05),滴水损失显著提升(P<0.05)。2%和4%的CR组血清总蛋白(TP)和肿瘤坏死因子(TNF-α)含量、过氧化氢酶(CAT)活性显著下降(P<0.05),尿素氮(BUN)及丙二醛(MDA)含量显著提升(P<0.05),1%~4%的CR组白蛋白(ALB)含量显著下降(P<0.05),4%的CR组白细胞介素1β(IL-1β)含量显著提升(P<0.05)。结论:添加1%的樱桃渣未对仔猪肉质及生长产生显著负面影响。The effect of cherry residue on the growth performance,serum biochemical indicators,and meat quality of piglets.320 healthy piglets with an average weight of(19.79±0.73)kg were randomly divided into four groups based on their body weight.Each group consisted of 8 replicates,with 10 piglets per replicate,and were divided into three feeding stages of 20~50,50~80,and 80~110 kg.0%,1%,2%,and 4%CR were added to the basic feed for each stage as experimental feed.The experiment lasted for a total of 103 days.The final weight of piglets in the 2%and 4%CR groups decreased by 3.73%and 4.51%(P<0.05)compared to the control group,while daily weight gain decreased by 4.91%and 6.19%(P<0.05),and feed to gain ratio increased by 4.72%and 5.70%(P<0.05).The L^(*)value and shear force of the longest back muscle in the 2%and 4%CR groups significantly increased(P<0.05),while the marble pattern score and crude fat content significantly decreased(P<0.05).The a^(*)value in the 1%to 4%CR groups significantly decreased(P<0.05),and the drip loss significantly increased(P<0.05).The serum TP and TNF-αlevels,as well as CAT activity,significantly decreased in the 2%and 4%CR groups(P<0.05),while BUN and MDA levels significantly increased(P<0.05).ALB levels significantly decreased in the 1%to 4%CR groups(P<0.05),and IL-1βlevels significantly increased in the 4%CR group(P<0.05).(Conclusion)Adding 1%cherry residue did not have a significant negative effect on piglet meat quality and growth.
