摘  要:为科学评价甜樱桃在贮藏期间的品质变化,以‘雷尼’和‘萨米托’甜樱桃为试验材料,分别采用静电喷涂和浸渍方法对其进行明胶基可食性涂膜保鲜处理,测定冷藏期间果实品质的变化。通过变异分析、相关性分析及主成分分析筛选核心指标,使用客观权重赋权法确定各指标的权重,并运用灰色关联度法建立不同保鲜处理条件下甜樱桃贮藏全过程的品质综合评价模型。结果表明,亚铁离子还原能力(FRAP)、色泽(L^(*)、a^(*)、b^(*)值)、总酚含量和β-半乳糖苷酶活性为评价甜樱桃品质的核心指标。基于此,建立甜樱桃品质综合评价模型为:甜樱桃加权灰色关联度=0.195×FRAP+0.1019×L^(*)值+0.2111×a^(*)值+0.1028×b^(*)值+0.1869×总酚含量+0.2023×β-半乳糖苷酶活性。随着贮藏时间的延长,各个样品的加权灰色关联度均有所下降;在相同贮藏时间点,‘雷尼’樱桃的耐贮性更强,涂膜保鲜在该品种上效果更为显著。研究结果可为甜樱桃的品质评价及贮运保鲜提供理论依据。In order to scientifically evaluate the quality changes of sweet cherries during storage,‘Rainy’and‘Samito’sweet cherries were used as experimental materials,edible gelatin-based coatings were applied using electrostatic spraying and immersion methods to preserve the fruit,and the fruit quality changes during cold storage were measured.Core indicators were screened out by variation analysis,correlation analysis,and principal component analysis.The objective weighting method was used to determine the weight of each index,and the grey relational degree method was used to establish a comprehensive quality evaluation model of sweet cherries under different preservation conditions.The results showed that ferrous ion reducing capacity(FRAP),color(L^(*),a^(*),b^(*)),total phenol content,andβ-galactosidase activity were the key indexes to evaluate the quality of sweet cherries.Based on this,the comprehensive quality evaluation model was established as follows:Weighted grey relational degree of sweet cherries=0.195×FRAP+0.1019×L^(*)+0.2111×a^(*)+0.1028×b^(*)+0.1869×total phenol content+0.2023×β-galactosidase activity.The weighted grey relational degree of each sample decreased as the storage time was prolonged.The‘Rainy’cherry had a greater storage resistance,and the effect of coating preservation was more obvious in this variety.The study can lay a theoretical basis for the quality evaluation and preservation of sweet cherries during storage and transportation.
