摘 要:【目的】在生态盈余视角下探究农村居民可持续食物消费与政策。【方法】以1998—2021年浙江、四川及内蒙古为例,通过模拟优化得出满足营养健康与生态环境双重需求的膳食结构,并分析由此导致的生态盈余变化。【结果】研究期内农村居民食物消费优化结果趋近于东方健康膳食模式。优化后各省农村居民年人均可持续食物消费总量均高于2021年实际摄入量,且在2013年后的生态盈余愈加显现,但是碳足迹、水足迹和生态足迹却难以协同降低,可持续食物消费对减排的作用远高于其对节约水土资源的作用。【结论】可持续食物消费政策的制定应充分考虑各省区的生态环境基础并尊重当地饮食文化的多样性,以食物消费补贴与价格调控等多措并举,引导农村居民向可持续食物消费转型。【Objective】This study aims to explore sustainable food consumption and related ecological surplus among rural residents,balancing nutritional adequacy and ecological sustainability.【Method】Taking Zhejiang,Sichuan and Inner Mongolia as representative regions from 1998 to 2021,simulation optimization was employed to derive dietary structure that simultaneously meet human nutritional requirements and ecological sustainability,followed by an analysis of ecological surplus trends.【Result】During the study period,food consumption among rural residents became increasingly diversified;however,improvements remained necessary.The optimized annual per capita sustainable food consumption exceeded the actual intake levels observed in 2021.An ecological surplus was first identified in 2013,yet it is difficult to achieve synergistic reduction.【Conclusion】Optimizing food consumption can harmonize dietary habits,nutritional needs and ecological preservation.Tailored local strategies are recommended to promote sustainable food consumption among rural residents.
