基于HS-SPME-GC-MS分析栽培模式对阳光玫瑰葡萄挥发性风味的影响

摘  要:为了探究栽培模式对阳光玫瑰葡萄花后12~17周挥发性风味物质的影响,采用顶空固相微萃取结合气相色谱-质谱联用(head space phase microextraction gas chromatography-mass spectrometry,HS-SPME-GC-MS)技术对促早栽培和避雨栽培下阳光玫瑰葡萄挥发性风味物质进行检测。结果表明,2种栽培模式下的葡萄中共检测出104种挥发性物质,其中,醇类13种、醛类20种、酮类18种、酯类17种、烯烃类9种、烷类13种、醚类3种、酸类4种、其他化合物7种。促早栽培和避雨栽培模式下的葡萄中均检测出醇类6种、醛类8种、酮类3种、酯类3种、烯烃类1种;促早栽培模式下醇类、酮类、酯类、醛类挥发性风味物质相对含量显著高于避雨栽培模式(P<0.05);酸类仅在避雨栽培模式检测出。相较于避雨栽培,促早栽培更有利于提高阳光玫瑰葡萄果实品质,研究结果为提高阳光玫瑰葡萄果实品质的栽培及管理方式提供参考。In order to investigate the effect of cultivation models on the volatile flavor compounds of Shine Muscat grapes from 12 to 17 weeks post-flowering,headspace solid-phase microextraction gas chromatography-mass spectrometry(HS-SPME-GC-MS)was employed to detect these compounds under forcing cultivation and rain-sheltered cultivation.The results showed 104 volatile substances were identified across the two cultivation models,including 13 alcohols,20 aldehydes,18 ketones,17 esters,9 olefins,13 alkanes,3 ethers,4 acids,and 7 other compounds.Specifically,6 kinds of alcohols,8 kinds of aldehydes,3 kinds of ketones,3 kinds of esters,and 1 kind of olefin were observed under both cultivation models.The relative contents of alcohols,ketones,esters,and aldehydes observed under the forcing cultivation model were significantly higher than those in rain-sheltered cultivation models(P<0.05),while acids were only found in the rain-sheltered cultivation model.Overall,the findings indicated that forcing cultivation enhanced the fruit quality of Shine Muscat grapes more than rain-sheltered cultivation,providing essential insights for improved cultivation and management practices.
