葡萄中20种活性成分花色苷和花青素含量筛查及比较

摘  要:采用高效液相色谱法筛查了黑提、红提、夏黑葡萄和嘉宝果4个品种葡萄果实及果皮中花色苷和花青素的含量,并进行比较。结果表明,4种葡萄中分别检出2~5种花色苷,黑提和夏黑葡萄中分别检出2种花青素。花色苷和花青素总含量从高到低依次为黑提>夏黑葡萄>嘉宝果>红提,黑提含量最高,为47.72 mg/100 g,且黑提中花色苷的种类最多,共检测到5种,含量最高的花色苷类型是锦葵素-3-0-葡萄糖苷氯化物和锦葵素-3-0-半乳糖苷氯化物,分别为18.91 mg/100 g和11.43 mg/100 g,占花色苷总量73%。果皮中花色苷总含量约为果实的17倍,黑提果皮总花色苷质量分数为691.90 mg/100 g,接近蓝莓,可综合利用果皮提取花色苷类功能性成分。所有葡萄中花色苷的总含量均远高于花青素总含量,花色苷是葡萄中该类功能性成分的原始状态。This experiment used high-performance liquid chromatography to screen and compare the content of different anthocyanins glycoside and anthocyanins in grapes:black grape,red grape,summer black grape,and Jiabao fruit.The experimental results showed that 2~5 types of anthocyanins glycoside were detected in 4 types of grapes,and 2 types of anthocyanins glycoside were detected in black grapes and summer black grapes,respectively.The total content of anthocyanins glycoside and anthocyanins in four types of grapes was:black grape>summer black grape>Jiabao fruit>red grape.The highest content of black grape was 47.72 mg/100 g,and black grape had the most types of anthocyanins glycoside,with a total types of 5.The highest types of anthocyanins glycoside were quercetin-3-0-glucoside chloride and quercetin-3-0-galactoside chloride,which were 18.91 mg/100 g and 11.43 mg/100 g,accounting for 73%of the total anthocyanins glycoside.The total content of anthocyanins glycoside and anthocyanins in the fruit peel was about 17 times that in the fruit,while the total content of anthocyanins glycoside in the black peel was 691.90 mg/100 g,which was close to blueberries.It could be comprehensively used to extract functional components of anthocyanins glycoside from the fruit peel.The total content of anthocyanins glycoside in all grapes was much higher than that of anthocyanins,which were the original state of functional components in grapes.
