摘 要:【目的】为评估不同品牌甜菜根粉质量安全状况。【方法】参考食品中多元素的测定相关标准以及甜菜根粉中甜菜红素的测定标准,检测了12个不同品牌甜菜根粉的基本指标及多种元素的含量。【结果】12种不同品牌甜菜根粉在颜色反应试验、最大吸收波长及吸光度试验、pH值测定中,所得的数值均符合国家相关标准。通过检测12种不同品牌甜菜根粉中多种元素含量,发现甜菜根粉中铁、锰、铜、锌含量较高,砷、硒、镉、铅含量较低,12种甜菜根粉中均不含汞元素。【结论】正规生产或正规渠道购买的甜菜根粉的主要理化指标安全性较高。研究结果可以增进消费者对甜菜根粉质量安全状况的了解,促进甜菜根粉产业的健康发展。【Objective】To evaluate the quality and safety of different brands of beet root powder.【Methods】The basic indexes and multi-element contents of 12 different brands of beet root powder were detected according to the relevant standards of determination of multi-elements in food and the determination standard of betalain in beet root powder.【Results】In the color reaction test,maximum absorption wavelength and absorbance test,and pH value determination,the values obtained from 12 different brands of beet root powder all met the relevant national standards.By detecting the content of various elements in 12 different brands of beet root powder,it was found that the contents of Fe,Mn,Cu and Zn in beet root powder were higher,the content of As,Se,Cd and Pb were lower,and the 12 kinds of beet root powder did not contain mercury.【Conclusion】The main physical and chemical indexes of beet root powder purchased by formal production or formal channels are safe.The findings enhance consumer understanding of the quality safety of beet root powder,promoting the healthy development of beet root powder industry.
