摘  要:本文用微分脉冲极谱法研究了多酚氧化酶的活性测定和酶的反应动力学。应用于马铃薯等10余种植物样品的酶活力测定,结果良好。方法简便快速,重现性好。The determination of polyphenols oxidase activity and the effects of various factors on the activity have been investigated by differential pulse polarography. The results show a good agreement with those obtained by titrimetric method. This method provides a rapid and simple procedure for direct determination of polyphenols oxidase activity and is also successfully applied in several kinds of plant samples such as potato, mushroom, caulif lower,water chestnut,radish,apple,banana,etc..
