摘 要:在淮南麦区以中筋小麦扬麦10号为材料,研究在高产栽培条件下不同时期追施氮肥对其品质的影响。结果表明:在总施氮(纯氮)量为225kg·hm-2、基肥与追肥比为5∶5的条件下,不同时期追施氮肥对籽粒蛋白质含量、淀粉含量、磨粉品质、淀粉糊化特性以及面粉和面条品质均有显著的调节作用;在4叶期、越冬期、返青期、拔节期追施氮肥均可使扬麦10号达到中筋小麦品质标准,且追施氮肥时期适度后移有利于品质的提高;拔节期追施氮肥可改善淀粉糊化特性和面条品质;抽穗期和开花期追施氮肥显著提高蛋白质和面筋含量,但面粉糊化特性和面条品质等有所下降,且产量偏低。拔节期是实现产量和品质协同提高的最适追施氮肥时期。A medium\|gluten wheat variety, Yangmai 10, was taken as an experimental material to study effects of nitrogen top dressing time on quality in the Southern Region of Huaihe River. The results indicated that nitrogen top dressing time could regulate significantly protein content, starch content, milling quality, paste traits, flour and noodle quality under the condition of the total amount of nitrogen application being 225 kg·hm-2 and the ratio of base and top dressing being 5∶5. Top dressing at the 4 leaf stage, winter stage, turning green stage or internode elongation stage was easy to reach quality standard of medium\|gluten wheat. N application postponed during above stages was beneficial to improve wheat quality, especially top dressing at the internode elongation stage could improve paste traits and noodle quality. The best stage of nitrogen top dressing that could coordinate the quality with yield was the internode elongation stage.
