过氧化氢对胶原性质的影响

摘　　要：生皮用石灰液处理并经过氧化氢或硫化物脱毛之后得到灰裸皮。前一种脱毛方法所得灰皮的收缩温度为 5 7℃ ,等电点 pH值为 4.6～ 4.8;后一种脱毛方法所得灰皮的收缩温度为 5 2℃ ,等电点 pH值为 5 .4～ 5 .6。用过氧化氢处理明胶 ,可使明胶的玻璃化温度升高。A limed hide was made by treating an unhaired hide with a lime solution. The shrinkage temperature (T s ) of limed hide which using hydrogen peroxide unhairing method is 57℃,and isoelectric point (IP) of that is pH4.6～4.8, but the T s of limed which using sulfide unhairing method is 52℃,and IP of which is pH5.4～5.6. The glass transition temperature (T g ) of gelatin can be rised when treated gelatin with hydrogen peroxide. All of these may be caused by the structure change of serine and threonine in collagen. After reacting with hydrogen peroxide, alcoholic hydroxyl of serine in hide collagen was oxidized into carboxyl group, and that of threouine was oxidized into acetaldehyde which could link with free amino group of protein.
