摘 要:以往的研究表明:低蛋氨酸含量的明胶能制得晶体形态比较高的高氯T 颗粒乳剂.本文用氧化方法进一步降低明胶中的蛋氨酸含量.明胶经氧化剂(H2O2)氧化能得到不同的氧化明胶.用电位法测定氧化明胶的还原性;用氨基酸分析仪测定它们的蛋氨酸含量;用SDS PAGE电泳法测定它们不同结构的组份含量.结果表明,还原性及蛋氨酸含量随氧化剂加入量的多少而变化;但氧化明胶的分子量分布与原胶相比变化甚小.The previous study showed that high chloride tabular grain emulsions having higher aspect ratio could be achieved by employing low methionine oxidized gelatins.In this paper the properties and methionine content of oxidized gelatins have been studied.Oxidized gelatins with different methionine content were prepared through oxidizing inert gelatins with H_2O_2.The reducing power of oxidized gelatins was tested by potential titration method,the methionine content was evaluated with L-8500 amino acid analyzer,the molecular weight distribution of the different conformation components was determined with SDS-PAGE method.The results indicated that the methionine content and reducing power varied with the different degree of oxidation,and oxidation had no remarkable influence on the molecular weight distribution of the oxidized gelatins relative to the original gelatin.
