摘 要:分析测定6个双孢蘑菇菌株和4个双环蘑菇菌株子实体组织及子实体不同部位组织内的多酚氧化酶(PPO)活性表明,双环蘑菇子实体组织内的PPO活性明显比双孢蘑菇菌株的低。双环蘑菇菌株酶液的OD436值在0.211~0.245之间,而双孢蘑菇菌株酶液的OD436值大于0.273。由此推测,双环蘑菇抗褐变性与其子实体组织内的PPO活性低有关。双环蘑菇子实体不同部位组织内的PPO活性差异不明显。而双孢蘑菇子实体不同部位组织内的PPO活性存在差异。菌株4607,3003,2796菇表层组织及菌褶和近菌褶组织PPO活性显著高于菌肉和菌柄组织,菌株4580,176,U3菇表层组织及菌褶和近菌褶组织PPO活性略高于菌肉和菌柄组织。Activities of polyphenol oxidases (PPO) in the tissues of different position of organism on fruitbody for 6 strains of Agaricus bisporus and 4 strains of Agaricus bitorquis were analyzed. The results indicated that PPO activities in the tissues of fruitbodies of A. bitorquis strains at growing stage were markedly lower than that of A. bisporus strains. The OD436 values in the enzyme liquids of A. bitorquis strains were 0.211-0.245 and the ones of A. bisporus strains were higher than 0.273. It was suggested that the antibrowning capacity of A.bitorquis was related to the lower activities of polyphenol oxidases in the fruitbodies.The PPO activities in different ppositions of organisms on the fruitbodies for A. bitorquis strains were similar and the ones for A. bisporus strains were different.
