摘 要:钙化壳是家禽蛋壳的主要构成部分,其中除了大量的CaCO_3,还含有丰富的有机基质。为了研究钙化壳中有机基质与蛋壳性状的关系,同时对鸡、鸭、鹅3种家禽钙化壳中的有机基质进行研究,将有机基质分为酸不溶性基质、水不溶性基质以及酸和水兼溶性基质3种组分。结果表明:①同一种家禽的钙化壳中,有机基质的蕴含量与钙化壳重量以及厚度均具有显著的相关性(P<0.05);但跨物种之间,蛋壳重量或者厚度越高,钙化壳中蕴含的有机基质不一定更高;②禽蛋钙化壳中总基质的结构组成(3种基质组分在总基质中的占比)或许具有种属特征;三种禽蛋中主要的基质成分——酸不溶性基质和水不溶性基质的构成比与本文所关注的所有蛋壳性状均无显著相关(P>0.05);③三种禽蛋中,蛋壳强度较低的鸡蛋和鸭蛋的钙化壳中,4类基质的百分含量与蛋壳破碎强度均无显著相关性(P>0.05);但在蛋壳强度较高的鹅蛋中,4类基质的百分含量与蛋壳破碎强度却显著相关(P<0.05)。总之,本文将有利于人们了解禽蛋壳内有机基质的结构组成和有机基质与蛋壳性状的关系。The calcified eggshell is the main component of avian eggshell. In addition to a large amount of CaCO3,the calcified eggshell also contains varieties of organic matrices. To understand the correlations between matrix and eggshell traits, the organic matrix in chicken, duck and goose calcified eggshells were simultaneously dissociated into acid-insoluble, water-insoluble, and facultative-soluble(both acid-and water-soluble) components. The results showed that: ① To the same poultry, the amount of organic matrix in the calcified eggshell was significantly correlated with shell weight and thickness(P<0.05);but among cross-species, it was not necessary that the more shell weight and thickness meant the more matrix;②relationships, trended to be more similar;moreover, both major components(acid-insoluble matrix, and water-insoluble matrix) showed no significant correlations with all shell traits(P>0.05);③ Among 3 poultry breeds, chicken and duck eggshells showed low breaking strength, percentage contents of 4 types of matrices in both poultries showed no significant correlations with the breaking strength(P>0.05);however, percentage contents of 4 types of matrices in goose eggshells, with high breaking strength, showed significant correlations with the breaking strength(P<0.05). In a word,above results would be helpful to understand the matrix constituents in poultry eggshells, and correlations between organic matrices and eggshell traits.
