摘  要:用 0世代剑白香猪作对照 ,对剑白香猪Ⅰ系和Ⅱ系 8月龄 5世代作肉质常规指标测定 ,结果表明 :其肉色正常 ,大理石纹适中 ,5世代与 0世代剑白香猪pH1差异极显著 (P <0 .0 1)、pH2 4差异显著 (P <0 .0 5 ) ,失水率和熟肉率差异不显著 (P>0 .0 5 ) ,各指标均在常值范围内。The determination of routine indexes of meat quality was conducted for the fifth generation Jianbai xiang pigs Ⅰ and Ⅱ with the age of 8 month, compared with zero generation Jianbai xiang pigs.The results showed that the evaluation of meat colour was normal, the marbling distributed properly ,the pH_(1)-value was very significant difference(P<0.01),the pH_(24)-value was significant difference(P<0.05),rate of dehydration and cooked meat percentage were not significant difference(P>0.05),every index was in the normal range.
