摘  要:目的了解东莞市餐饮业食品安全管理员的基本情况、食品安全认知及行为,为生产、销售、餐饮等环节的食品安全管理员培训及管理提供参考。方法结合现场调查与在线调查,采用分层抽样调查了222名餐饮业食品安全管理员的相关知识态度及行为。结果食品安全管理员主要以男性、青壮年为主;学历构成以大专及以上学历为主;总工作年限与餐饮行业工作年限呈正相关。知识态度及行为总得分最高27分,最低10分,中位数17分,达到及格水平占比56.3%,优良水平占比8.1%。在知识得分方面,单位规模、从业年限、工作岗位和证书级别具有统计学差异;在行为得分方面,单位规模、学历、工作岗位、证书级别和专兼职情况具有统计学差异。结论应加强中小规模餐饮单位的管理和人员培训,强化经营责任意识,提高餐饮业食品安全整体水平。Objective The aim of the survey was to get the general characteristics and the KAP score on food safety,and to provide reference for training and managing of food safety managers.Methods Stratified sampling method was applied on 222 subjects by both field survey and online survey.Results Most of the subjects were male,young adults,with college degree or above.There was correlation between total working duration and catering working duration.The median of total score was 17 with the highest 27 and the lowest 10.As for knowledge score,there were difference among unit size,working duration,placement and certificate.As for behavior score,there were difference among unit size,diploma,placement,certificate and full-time or part-time job.Conclusion Improvement of food safety level highly depended on the strict management and business responsibility,especially in small and medium-sized catering units.
