摘  要:对美人梅叶片花色苷的稳定性进行研究,结果表明:花色苷在高温(100℃)条件下稳定;紫外光、直射光对花色苷具有增色作用;在pH1~3的环境下花色苷颜色较为稳定;氧化剂Vc,H2O2,Na2SO3对花色苷影响较大,而还原剂无影响;Fe3+,Ca2+,Cu2+,Zn2+对花色苷有增色效果,并以Fe3+效果最好,Ca2+,Cu2+,Zn2+次之,而Mg2+与Na+对花色苷无影响;葡萄糖、柠檬酸和蔗糖均对花色苷也有增色作用。The stability of anthocyanin in leaves of Prunus mume Meiren was discussed in the experiment.The result showed that the high temperature had no effect on the stability of anthocyanin.The ultraviolet light and direct light have color enhancement effect on the anthocyanin.It was steady while the pH value was between 1.0 and 3.0.H2O2 and Na2SO3 had obviously effect on it.However,Vc had no effect on it.Metallic ion of Fe3+,Ca2+,Cu2+,Zn2+ had a function of approving color,and Mg2+,Na+ had no influence.Glucose,...
