摘 要:建立菠萝蜜下脚料中多酚含量的分析方法。使用福林酚比色法,在单因素试验的基础上,优选出适合菠萝蜜下脚料中多酚测定的显色条件:20%的福林酚试剂加入量为3.5 mL,7.5%碳酸钠溶液2.0 mL,显色反应时间40 min;并通过单因素试验和正交试验对提取条件进行研究,确定多酚的提取条件:提取溶剂为30%乙醇-水溶液,提取时间1.5 h,温度80℃,料液比1∶30(g/mL);从而确立了菠萝蜜下脚料中多酚含量的分析方法。用该方法测定菠萝蜜不同部位下脚料中多酚含量,结果表明外种皮多酚含量最高,为2.010 mg/g;内果皮含量最少,为0.549 mg/g;其他各部位多酚含量分别为:外果皮1.639 mg/g、丝0.826 mg/g、芯1.080 mg/g。In this article,an analytical method was established.By the orthogonal design based on every single factor,the Folin-Ciocalteu Colorimetry was optimized.The best condition was,phenol reagent 3.5 mL,7.5 % sodium carbonateon 2.0 mL,color reaction time 40 min.From finding the optimized extraction condition,an analytical method of polyphenol's content in Jackfruit's Trash was finally established: extractive time 1.5 h,material-liquid rate: 1∶30(g/mL),ethanol concentration 30 %,extractive temperature 80 ℃.Polyphenol's contents in different parts of Jackfruit's trash were also tested.It was found that the episperm had the highest content,2.010 mg/g,the endocarp held the lowest,only 0.549 mg/g.And the polyphenol's contents of the other places were: epicarp 1.639 mg/g;silk 0.826 mg/g;core 1.080 mg/g.
