摘  要:以壳聚糖与魔芋胶为基质制备复合涂膜保鲜剂,研究了多糖涂膜与冰块泡沫箱包装联用对杨梅(Myrica rubra)果实品质及其生理生化变化的影响。结果表明,与空白对照相比,经多糖涂膜的杨梅果实霉烂率、失重率明显降低,多糖涂膜抑制了果实呼吸强度的上升,使有机酸、维生素C等营养成分转化、流失的速度减慢,有效地降低了丙二醛(MDA)、花青素含量和相对电导率的升高,使多酚氧化酶(PPO)、过氧化物酶(POD)和苯丙氨酸解氨酶(PAL)活性处于较低的水平,延缓了果实的衰老和品质的下降,方便包装与长途运输。Compound polysaccharides coating antistaling agent was prepared by chitosan and konjac gum,and its effect on quality and physiological and biochemical changes of waxberry(Myrica rubra) when co-applied with refrigerated packing.The results showed that compared with the control group,the rotten fruit rate and weight loss rate of waxberry treated by polysaccharides coating decreased obviously;the increase of respiration rate was inhibited;decrease of total vitamin C and organic acids content,increase of MDA,anthocyanidin content and relative conductivity was slowed down;enzyme activity of PPO,POD and PAL was restricted at relatively low level.The senescence and rotten process of waxberry treated by polysaccharide coating was delayed as the fruit quality was preserved well.This preservation method was convenient for packing and longdistance transportation during storage.
