摘　　要：海藻糖是一种非还原性双糖,具有低甜味,其化学性质稳定,有稳定细胞膜和蛋白质结构的特性,对干燥、脱水的生命物质具有保护作用。文章介绍了海藻糖的各种生产方法及其在生物制品、医学、生命科学研究、食品工业上的应用。Trehalose is a non-reducing disaccharide, it has mildsweetness and chemical stability, possesses functionof protection dry and dehydration life materials from damage due to the properties of stabilization of cell membranesand proteins. In this paper, the production methods and applications of trehalose were introduced.
