摘　　要：文章报道了木薯淀粉酶法制取异麦芽低聚糖的生产工艺及其开发应用。试制的产品中异麦芽低聚糖含量在 59%以上 ,其中异麦芽糖、潘糖和异麦芽三糖之和高于 40 %。Production technique of producing Isomalto oligosaccharide from cassava starch with enzyme and application of Isomalto oligosaccharide was reported The content of Isomalto oligosaccharide is higher than 59% in the product and the total content of Isomaltose,Panose and Isomaltotriose was higher than 40% [
