摘 要:本文根据两组评酒员感官评价结果,运用多元总体的均值向量和方差的检验,得到感官评价结果的显著差异性.进而通过系统聚类法得到对酿酒葡萄的分级结果.应用相关分析原理进一步研究葡萄与葡萄酒的理化指标之间的确定性关系,建立回归模型.应用主成分分析,逐步回归等方法进行分析,结果表明,仅考虑酿酒葡萄和葡萄酒的理化指标对葡萄酒质量的影响不大,不能仅用葡萄和葡萄酒的理化指标来评价葡萄酒的质量.According the evaluation results of groups Tasting member sensory,using polyhydric overall mean vector and variance of the test to obtain the results of sensory evaluation of significant differences.Then through the system clustering method to get the results of the classification of wine grape.Use the principle of correlation analysis further research deterministic relationship between the physical and chemical indicators of grape and wine,and build the establishment of a regression model.The results show that considering the physical and chemical indicators of wine grapes exclusively is not enough on the wine quality and to evaluate the quality of the wine.We can not just evaluate the quality of the wine by the physical and chemical indicators of grape and wine.
