摘　　要：兔肉精深加工技术是当前制约我国兔产业实现可持续发展的关键因素。随着兔肉生产的持续增长,熟制兔肉产品面临广阔的市场前景。本文对我国熟制兔肉产品加工进行了系统分析,并针对兔业发展趋势,对熟制兔肉产品加工提出了相应的发展建议。Rabbit meat intensive processing technology is the key factor to realize the sustainable development of industry in China. With the steady growth of rabbit meat production,cooked meat products face a broad market prospect. In this paper, the cooked meat products in our country has carried on the system analysis, and with the developing trend, visit the cooked meat products processing and put forward the corresponding development suggestions.
