摘　　要：对果蔬纤维组织结构和断裂机理进行了分析 ,得到了对果蔬纤维湿法超细粉碎较为有效的粉碎方式 ;研究了几种果蔬纤维湿法超细粉碎设备的湍流域特性参数与关键结构和操作参数间的关系 ,并分析了这些设备的粉碎效果。This paper analyses the tissue texture and the breaking principle of the fruit vegetable fibers, gets the valid shattering modes for shattering the fruit-vegetable fibers, then studies the relationship between some parameters of shattering rapids and key structure and operational parameters about several equipments for fruit-vegetable fiber wet shattering, also analyses shattering effect of these equipments.
