摘　　要：回顾了中国稻米加工业和技术发展的历程,总结近年来稻米加工技术的进展,分析稻米生产和消费的发展趋势,展望我国将采用生物技术和现代分离技术研究开发稻米精深产品和高附加值产品的加工技术,同时应用信息和自动化等技术研制相应的加工装备。The development course of the Chinese rice milling industry and technology is looked back, the relative technical progress in resent years is summarized, the developing trend of the domestic rice production and consumption is analyzed, and the techniques for developing further processed rice products and value-intensified products with bio-tech and modern separation technology to be adopted in China as well as the processing facilities to be researched on with information and automation techniques are looked ahead.
