摘　　要：本文研究了木聚糖酶的稳定性及最适温度和最适pH值.结果发现,木聚糖酶具有较差的热稳定性和较好的pH值稳定性.其最适温度为50℃,最适pH值为4.2.This thesis focused on the stability,the most suitable temperature and pH value of xylanase . The result showed that xylanase had bad heat stability and good pH stability. The most suitable temperature of xylanase is 50C and the most suitable pH value is about 4.2.
