摘 要:详述淀粉颗粒的形状大小、结晶结构、分子结构、颗粒的微孔特性等最新研究成果,同时对淀粉颗粒及淀粉化学改性的研究方向提出展望。The new researching result of starch granule structure, including the shape and size, crystal structure, molecular structure and model, channels structure etc. was introduced. It shows that there exists some radial, tube-like channels in corn and sorghum starch granules, they penetrate from the external surface inward a cavity at the hilum in recent study. Based on the knowledge, it can be conclude that the prospect of starch chemic modify lies in orientating modify. That is controlling the position of substitute group in amylose or amyloectin of starch granules, and orientating the substitute group in the single glucose unit. It demands further research in the above field.
