摘 要:目的 通过大鼠吸入染毒烹调胡麻油烟 (CSOF) ,检测烹调胡麻油烟对大鼠血清及肝组织匀浆中超氧化物歧化酶(SOD)活性、谷胱甘肽过氧化物酶 (GSH -Px)的活性、谷胱甘肽 (GSH)、丙二醛 (MDA)的含量变化 ,探讨其变化规律和对肝损伤的作用机理。方法 采用动式吸入CSOF为染毒组 ,油烟平均浓度为 (4 3 91± 14 76 )mg/m3 ,阴性对照组吸入新鲜空气 (2 0℃~ 2 4℃ ) ,每组 18只动物 ,分别于染毒第 2 0、4 0、6 0d三时相收集肝脏标本测定肝组织匀浆中SOD、GSH -Px活性 ,MDA、GSH含量 ,同时收集血液标本后测定血清中GSH含量和GSH -Px活性。结果 大鼠吸入CSOF可致肝组织MDA含量增高 (P <0 0 1) ,GSH -Px和SOD活性明显低于阴性对照组 (P <0 0 5 ,P <0 0 1) ;GSH含量明显低于阴性对照组(P <0 0 5 ,P <0 0 1)。Objective To probe the toxicity of the cooking oil fumes to the liver tissue. Methods Eighteen rats were randomly divided into three groups and inhaled cooking oil fumes(43.91±14.76mg/m 3 ,1.5h/d×20d,40d,60d respectively)as toxicant exposure groups. The another 18 rats inhaled the fresh air(20℃~24℃)as control groups.The pathomorphological changes in liver tissue were microscopically observed . The activity of superoxide dismutase(SOD)、the content of the malondialdehyde(MDA)、the content of the GSH and the activity of GSH-Px in liver cytoplasm were chemically determined. Meanwhile, the content of the GSH and the activity of GSH-Px in serum were also meansured. Results The SOD activity of the toxicant exposure group decreased, while the MDA content in liver cytoplasm increased significantly, compared with that of the control group(P<0.01 ), the GSH content and the GSH-Px activity of the exposure group decreased significantiy(P<0.05,P<0.01). The GSH content and the GSH-Px activity in serum of the exposure group also decreased significantly (P<0.05 ,P<0.01). Conclusion The cooking oil fumes might induce lipid peroxidation of rats liver.
