摘 要:本文比较了红心萝卜、萝卜红色素的吸收光谱和溶液稳定性,并用分光光度法测定了红心萝卜肉质根的色素含量。结果表明:最大吸收峰均在520nm附近,萝卜红色素可作为原料色素含量测定的标准品;待测液稳定性较差,田间取样后应即时测定。利用萝卜红标准曲线计算汁液浓度,结合含水量指标测得7个红心萝卜品系的色素含量为8 4‰~15 2‰,平均12 1‰。The experiment was carried out to measure the pigment content of succulent root of red-core radish by spectrophotometry and the absorption spectra and solution stability of the red-core radish and radish red pigment were analyzed.Results showed that the absorption peaks were all at 520 nm or so.Radish red pigment could be used as standard analytical.Solution stability of red-core radish was bad. It indicated that the pigment content of 7 strains of red-core radish were 8.4 ‰-15.2 ‰ and average 12.1 ‰ by calculating concentration of normal juice with standard curves of radish red pigment and measuring of water content.
