摘  要:针对潮褐土区域土壤重金属Cd、Zn污染的特点,采用盆栽的试验方法,研究了Cd、Zn对小白菜营养品质指标的影响.结果表明:小白菜在Cd、Zn单因素处理条件下,其营养品质指标叶绿素、还原糖和Vc都随添加重金属浓度的增加呈逐渐下降之势;粗蛋白含量表现出低浓度处理降低,高浓度处理升高的趋势;粗纤维含量随土壤中Cd添加浓度的增加呈逐渐增加之势,随土壤中Zn添加浓度的增加呈先降后升的趋势.当小白菜在Cd、Zn复合处理条件下时,重金属Cd、Zn对粗蛋白的影响表现出协同正效应,对还原糖、叶绿素和Vc的影响表现出协同负效应,对粗纤维的影响表现为拮抗作用.Cinnamon Soil was used to study the effects of heavy metal cadmium and zinc contamination on the nutritional quality of non-heading Chinese cabbage with pot culture. The results showed that under single cadmium or zinc treatment the content of chlorophyll, reducing sugar and vitamin C gradually decreased with the levels of cadmium or zinc added in soil. The content of crude protein dropped when cadmium or zinc concentration was low and rose when it was high. The content of crude fibre decreased with low concentration and increased with high concentration of zinc and it increased with the levels of added cadmium. Under complex cadmium and zinc treatment, zinc cooperated with cadmium to improve the content of crude protein and reduce the content of chlorophyll, reducing sugar and vitamin C. Zinc counteracted cadmium to affect the content of crude fibre.
