摘　　要：　 [目的 ]检测烹调油烟对人外周血淋巴细胞的毒性作用 ,并分析烹调油烟对职业暴露人群的免疫损伤作用 ,为全面评价烹调油烟的健康危害提供依据。 [方法 ]从居民厨房脱排油烟机的集油杯中采取烹调油烟冷凝物 ,用二甲基亚砜 (DMSO)配成不同浓度的烹调油烟冷凝物乳液 ,应用MTT法检测烹调油烟冷凝物对人外周血淋巴细胞的毒性作用。以餐饮行业厨师 87人为暴露组 ,管理人员 65人为对照组进行流行病学调查。测定外周血免疫球蛋白和T淋巴细胞转化率 (PBLT) ,采用多因素分析方法分析职业暴露烹调油烟对机体免疫功能的影响。 [结果 ]不同浓度烹调油烟冷凝物受试组间的吸光度 (A)值差异有显著性 (P <0 .0 1) ;受试物浓度在 12 5 μg /ml以上时 ,各浓度组与DMSO对照组的吸光度(A)值都存在显著性差异 ,而且各浓度组吸光度 (A)值随测试浓度的升高而递减。暴露组IgG、IgA和PBLT明显低于对照组 ,而且与暴露年限存在剂量 效应关系。 [结论 ]烹调油烟对人外周血淋巴细胞具有一定的毒性作用 ,并且存在剂量 反应关系。Objective To examine the toxicity of cooking oil fume on human lymphocytes and identify the immune toxicity of cooking oil fume to exposed workers. Cooking oil fume condensates were collected from some families.A modified MTT assay was applied to examine the toxicity of cooking oil fume on human lymphocytes in peripheral blood; 87 male cooks as a group of exposed workers and 65 controls were selected,IgG,IgM,IgA in serum and transformation activity of T lymphocytes of peripheral blood(PBLT) were used as indicators of the immunologic function. The results showed that(1)There was a significant difference in the value of absorbency(A value)between the different test groups(P<0.01);the A value of the test group when the test concentration is over 125 μg/ml is significantly different from the control group(DMSO),and the A value decseased with the test concentration increased,in a dose-effect relationship in the toxicity of cooking oil fume condensate to the human lymphocytes;(2)IgG,IgA and PBLT of exposed workers were significantly lower than those in the controls,and the indicators of IgG,IgA and PBLT decreased with increase in exposure years. [Conclusion] The cooking oil fume can cause cell toxicity to the human lymphocytes and it is harmful to immunologic function.These results seem to indicate that cooking oil fumes may possess potential health hazard to the exposed persons.
