摘  要:1992~1993年对合川市酿造厂虫害进行调查表明,干酒曲有13种害虫,以长角扁谷盗阶Crytoteslesminutus数为较多。酱油的复合曲醅较单酶曲醅虫害重,主要是酱曲露尾甲,Carpopphilushemipterus和粉斑螟Ephestiacautella。醋的醋醅害虫至少有15种,而以酱曲露尾甲密度最大。The pest insects of ferment materials were investigated from 1992 to 1993 in Hechuan,Chongqing.Thirteen species of pest insects were found in distiller’s yeast,of which Cryptotesles mimutus was the predominant species,averaging 14 heads/100 g dry distiller’s yeast and 26.93heads/100 g wet or fresh distiller’s yeast.Based on the practical experience,this pest wasresponsible for about 8% 10% of the damage. The complex-zymase sauce yeast was invadedmore gravely than the single-zymase sauce yeast.Two major species were found responsible for thedamage caused to sauce yeast,dry fruit beetle( Carpophilus hemipterus)and almond moth(Ephestiacautella),contributing 47.5 and 17.5% of the damage , respectively. No less than 15 species ofinsects were found in vinegar’s yeast during the later fermentation process. C. hemipterus had thegreatest density in the upper layer(ca. 5 cm)of the vinegar’ s yeast, averaging 18. 13 heads/100 g.
