摘 要:目的了解蚌埠市面粉过氧化苯甲酰的添加情况,为进一步加强面粉卫生质量管理提供依据。方法对蚌埠市生产、销售和使用的面粉进行随机抽检,采用高效液相色谱法检测面粉中过氧化苯甲酰的含量,并按GB2760—1996进行判定。结果2001年~2003年共抽检面粉171份,检出含过氧化苯甲酰的面粉167份,检出率为97.7%。2001年面粉过氧化苯甲酰合格率为62.2%,2002年为50.0%,2003年为21.1%;本地生产的面粉过氧化苯甲酰的合格率高于外地生产的面粉;学校食堂使用的面粉过氧化苯甲酰合格率低于生产和销售环节的面粉。结论应加强面粉增白剂的卫生监督力度,依法查处过量添加增白剂的违法行为。应加强食品标签的管理,所有面粉生产企业均应在面粉外包装上标注增白剂的名称和含量。Objective To understand the situation of adding Benzoyl Peroxide(BPO) to flour in Biegbu. Methods Production, sale and use of flour in Bengbu were inspect by random samples for BPO). HPLC (high performance liquid chromatogram) was adopted to detect the content of BPO in the flour. GB2760-1996 (BPO≤0.06g/kg) was used to judge if it was qualified. Results 171 samples of flour were inspected in 2001-2003, BPO were examined out in 167 samples, the detection rate of BPO in flour was 97.7%, the qualified rate of BPO was 62.2% in 2001, 50.0% in 2002 and 21.1% in 2003. The qualified rate of local flour was higher than that of flour from outside Bangbu. The qualified rate of BPO in flour used in school dining room was lower than that in flour mill or markets. Conclusions The hygiene supervision to the flour bleaching agent should be strengthened, and ought to investigate and deal with the illegal activities of over adding the bleaching agent according to law, and strengthen management of food label. All flour manufacturing enterprise should mark name and amount of bleaching agent on pack outside flour.
