摘  要:本试验测定了黑木耳的平衡水分,并在给定条件下进行了木耳的薄层干燥试验,发现其干燥过程可分为预热干燥阶段和降速干燥阶段;开始干燥到某一段时间内的湿基水分的变化,可以用2次指数曲线表示;若不控制试料表面温度,进行干燥时试料表面温度与湿基水分呈线性关系。The balance water of black fungus had been determined, Meanwhile, the experiment ofthin-layer dry on black fungus had been done in the given condition. Results revealed that the dry processwas divided into preheating dry phase and decelerating dry phase; The changes of wet basic water dried untila certain period of time might be indicated by quadratic exponential carve ;If the surface temperitune of experimental materials wasn't controlled, there was linear relationship between the surface temperiture of materials and the wet basic water.
