摘  要:研究结果表明:海红果加1.5倍的水打浆,与胡萝卜浆(胡萝卜加等量的水打浆)按1∶1复合,添加稳定剂0.06%琼脂+0.1%羧甲基纤维素(CMC),采用20MPa压力均质,可加工成营养丰富,色、香、味、口感俱佳的保健性复合果肉饮料,产品保持3个月不分层,杀菌后室温贮藏1年,卫生指标符合国家标准。The fresh midget crabapple fruit,added with 1.5 times of water and smashed into thick liquid material, was mixed with carrot liquid (carrot and an equal amount of water were smashed into thick liquid material)by 1∶1,then the complex stabilizer,0.06% agar-agr + 0.1%carboxyl methylcellulose(CMC) were added and it was homogenize at 20 MPa pressure,finally a compound health pulpous can be made. It is of good colour, nice fragrance,pleasant flavour and wonderful mouthfeel.It cannot be divided into layer for 3 months under the normal temperature and can be preserved indoor for a year after being sterilized.The hygiene indexes accorded with the national standard completely.
