摘 要:以亚硒酸钠为对照,研究了纳米硒对肥育猪肌肉品质的影响.234头体重45kg左右的杜长大肥育猪按饲养试验要求分为13组,每组3个重复,每个重复6头.将纳米硒和亚硒酸钠2种硒源分别以0.10、0.20、0.30、0.40、0.50、1.00mg/kg6个硒水平添加到基础日粮中,配制成12种试验日粮,基础日粮作对照.结果显示①亚硒酸钠添加浓度在0~0.20mg/kg,背最长肌滴水损失随着硒添加浓度的增加而降低;添加浓度在0.30~1.00mg/kg,滴水损失随着硒添加浓度的增加而升高;1.00mg/kg硒添加水平滴水损失显著高于0.20~0.50mg/kg硒添加水平(P<0.05).纳米硒添加浓度在0.20~1.00mg/kg滴水损失始终保持在低峰平台.硒源添加浓度在0.40~1.00mg/kg硒时,纳米硒组滴水损失显著低于亚硒酸钠组(P<0.05).②硒源添加浓度在0.10~0.30mg/kg时,两种硒源对背最长肌GSHPx活性、TAOC和MDA含量的影响无显著差异(P>0.05);硒源添加浓度在0.40~1.00mg/kg硒时,纳米硒组GSHPx活性和TAOC显著高于亚硒酸钠组(P<0.05),MDA含量显著低于亚硒酸钠组(P<0.05).③硒源添加浓度在0.10~0.30mg/kg时,两种硒源对背最长肌硒含量的影响无显著差异;在0.40~1.00mg/kg硒添加水平上,纳米硒组背最长肌硒含量显著高于亚硒酸钠组.④空白组背最长肌肌红蛋白含量显著低于加硒组(P<0.A total of 234 finishing pigs (Duroc×Landrance×Yorkshire) were used to investigate the effects of nano elemental selenium (Nano-Se) or sodium selenite (Na_2SeO_3) on meat quality. The pigs were allocated to 13 treatments, each of which had 3 pens of 6 pigs per pen. Of the 13 treatments, one was the treatment in which the pigs were feeded with basal diet containing 0.046 mg/kg Se and served as control. Pigs in each of six experimental treatment were given, besides basal diet, 0.10, 0.20, 0.30, 0.40, 0.50 or 1.00 mg/kg supplemental Se in the form of Na_2SeO_3 and pigs in each of the other six experimental treatments were given the same concentration range of supplemental Se in the form of Nano-Se. The results were as follows: (i) When Na_2SeO_3 was added to the diet, drop loss of muscle decreased with the concentration of Se at the concentration range of 0-0.20 mg/kg and increased at the range of 0.30-1.00 mg/kg Se. Supplementation with 1.00 mg/kg Se as Na_2SeO_3 increased (P<0.05) drop loss as compared with the addition of Se in the concentration range of 0.20-0.50 mg/kg. When Nano-Se was added to the diet, drop loss remained steady at the peak value even at a concentration of 1.00 mg/kg Se. The pigs had lower (P<0.05) drop loss in the concentration range of 0.40-1.00 mg/kg as Nano-Se than as Na_2SeO_3. (ii) There were no significant difference in activities of glutathion peroxidase(GSH-Px), total antioxidative competence (T-AOC) and malondialdehyde (MDA) of muscle between the treatments of Nano-Se and Na_2SeO_3 when the added concentration of Se was 0.10-0.30 mg/kg. The pigs had higher (P<0.05) GSH-Px and T-AOC activities and lower (P<0.05) MDA activity in the concentration range of 0.40-1.00 mg/kg as Nano-Se than Na_2SeO_3. (iii) There were no difference in Se content of muscle between the treatments of Nano-Se and Na_2SeO_3 when the added concentration of Se was 0.10-0.30 mg/kg. The pigs had higher (P<0.05) Se content of muscle in the concentration range of 0.40-1.00 mg/kg supplied as Nano-Se than as Na_2SeO_
