摘 要:通过对120日龄的4种江西地方品种鹅:莲花白鹅、广丰白银鹅、兴国灰鹅、丰城灰鹅进行肌肉常规化学成份及脂肪酸测定比较,结果发现蛋白质、灰分及水分三项指标在品种间达极显著水平(P<0.01),其中水分含量以莲花白鹅最高(73.389%),兴国灰鹅最低(69.473%);蛋白质和灰分含量以兴国灰鹅最高(分别为24.379%和1.462%),丰城灰鹅最低(分别为21.604%和1.29%);脂肪含量以兴国灰鹅最高,但各品种间差异不显著,不饱和脂肪酸的含量也以兴国灰鹅最高。The routine chemical components and fatty acid of muscle of four sorts of Geese from several local species (Lianhua white goose, Guangfeng argent goose, Xingguo gray goose, Fengcheng gray goose) in Jiangxi Province were determined and their muscle qualities were compared. The results showed that there were very significant differences in protein, ash and moisture among the varieties(P<0.01).Among them the moisture content was the highest in Lianhuan white goose(73.389%), the lowest one was in Xingguo gray goose(69.473%). The protein and ash contents were the highest in Xingguo gray goose(24.379% and (1.462%), respectively);the lowest one was in Fengcheng gray goose(21.604% and 1.29%, respectively); the contents of fat and unsaturated fatty acid were the highest in Xingguo gray goose;but there was no significant difference in the fat content among these varieties.
