摘 要:研究了γ射线辐照红曲的灭菌效果以及对主要成分的影响。结果表明:辐照可有效杀灭红曲中的杂菌和霉菌,随着辐照剂量的增加,红曲中的含菌量呈同步下降。杂菌和霉菌的D10值分别为2.34和5.89kGy,霉菌对γ射线的耐受力高于杂菌,适宜的辐照工艺剂量为7~8kGy。经7~8kGy辐照处理的红曲,其主要成分无明显变化,但色价略有下降,下降率为2.3%~2.6%。经辐照灭菌后的红曲具有较好的耐贮藏性,可有效地提高保质期。The effects of 60Co gamma-ray irradiation on sterilization and decontamination and main components of monascorubin powder were studied. The results show that gamma-ray irradiation can effectively and efficiently kill the bacteria and moulds in monascorubin powder, and the percentages of the bacteria and moulds synchronously decrease with the increase of the irradiation dose. The D10 values for bacteria and moulds were 2.34 kGy and 5.89 kGy, respectively; the tolerance of molds to irradiation is higher than that of bacteria to irradiation. The optimum irradiation dose for monascorubin powder for the purpose of sterilization and decontamination is in the range of 7-8 kGy. The main components of monascorubin powder irradiated at a dose of 7-8 kGy have no obvious changes, but the chroma of monascorubin powder is decreased by 2.3%-2.6%. Monascorubin powder after sterilization by gamma irradiation has better storability to lengthen the storage life and maintain good quality.
