摘 要:目的分析安徽省省级卫生直管餐饮单位食具卫生监测结果,探索保障食具卫生安全的有效措施。方法依据中华人民共和国国家标准GB14934-94《食(饮)具消毒卫生标准》,对1999~2003年安徽省级直管单位食具样品进行监测分析。结果安徽省级直管单位的食具消毒合格率近年来由95.81%上升到99.16%,达到平均97.01%的较高水平。结论在对餐饮单位卫生直管过程中,已取得保障食具卫生安全的一些成功经验,如从业人员卫生和法律意识的建立,卫生知识培训以及消毒设施和方法的选用等。这些经验可在全省范围内推广。Objective To analyze the results of tableware hygienic surveillance of units governed by provincial institution and find the effective measures to ensure hygienic safety of tableware. Methods Tableware Samples of units governed by provincial institution during the period from 1999 to 2003 were tested and analyzed according to National Standard of the People's Republic of China GB14934-94 Hygienic standard for disinfection of dinner and drinking set. Results Qualified rate of tableware disinfection had risen form 95.81% to 99.16% in recent years and reached the higher level of 97.01% on average. Conclusions By having managed six units for several years, some successful experiences had acquired to ensure the hygienic safety of tableware. Hygienic and legal awareness of workers was built and hygienic knowledge was trained and disinfection facilities and methods were selected and used, and so on. The good practice should be spread from now on.
