黑米色素的提取研究

摘　　要：本文以黑米品种紫香糯为原料，研究了提取黑米色素的方法及工艺条件，得到了色素的提取率可达８９％以上的ＪＡ浸提法和工效俱佳的“二浸一洗”新工艺。The method and technological condition of the extraction of pigments in black rice weresrudied in this paper,by black rice variety Zixiomgnuo. We developed the JA extraction method witha yield of 89% and new technique called″two soaking and one washing″,The test conditions of theextraction were as follows:extraction acidity PH=0, Sample size of 40 item,temperature ofextraction of 50℃,time of extraction of 30 ～ 45min,extraction of JA ,density of extractant of20%,number of times of Extraction of 2.
