硒对酱油诱发小鼠骨髓细胞SCE的抑制作用

摘　　要：本实验结果表明，灌喂酱油能诱发小鼠骨髓细胞姊妹染色单体交换率的增高，差异极其显著（Ｐ＜０．０１）；自由饮用４ｐｐｍ的亚硒酸钠可抑制酱油诱发ＳＣＥ的增高，差异极其显著（Ｐ＜０．０１）。揭示硒作为一种潜在的食品抗突变和抗癌添加剂的可能性。In this paper, the sister chromatid exchange (SCE) frequeney of mouse bone marrow cells in vivo have been examined, the result shows that feeding the mice with soy sauce could induce the increase of SCE frequency, the difference being very significant; after freely drinking 4 ppm Na2Seo3 could inhibit the SCE frequency induced by soy sauce,the difference being very remarkable too. It suggests that the possibility of Selenium as a potential food additive of antimutagenesis and anti-carcinogenesis.
