浅谈五台山野菜资源的开发与利用

摘　　要：五台山野菜资源丰富,分布范围广,营养价值高,风味独特,当地食法多样,具有广阔的开发前景。然而目前除个别珍稀种类外,绝大多数野菜食用仅限于百姓间,培植、采集、食用、加工的研究极少,积极进行五台山野菜资源研究,合理开发利用五台山野菜资源,可促进山区农民脱贫致富的步伐,同时也将成为五台山农业经济和生态旅游经济的一个新的增长点。The edible herbs in Mr. Wutai are rich with wide distribution, high nutritive value, special flavor and many ways of cooking. So the prospect of exploiting them is broad. But, except for a few rare kinds, most of them are eaten only by the local people and we are lack of research about how to plant, collect, process and cook them. Active research of the resource and exploitation can promote the local mountain people become rich and make a new economic increasing point of agriculture and ecological tourism in Mt. Wutai.
