牡蛎中硒的催化动力学光度测定与营养学分析

摘　　要：硒能够在硝酸介质中催化KBrO3氧化甲基橙的褪色反应,当硒的浓度在0～8 μg/L范围内时,与lg(A0/A)值呈直线关系.应用催化动力学光度法可以测定牡蛎中硒的含量.实验结果表明这个方法具有良好的准确度.大连渤海海域牡蛎中硒的含量为0.63 μg/g,标准偏差为0.02 μg/g,变异系数为3.52%.营养学分析指出:食用160 g左右的渤海牡蛎即可满足成年人每日对硒的摄取需求.Se is capable of catalyzing the discoloring oxidization of methyl-orange by potassium bromate in nitric acid medium. Linear relationship is kept between the lg（A9/A） value and the concentration of Se in the range of 0 to 8μg/L. Thus, the Se contents in oyster can be measured by Catalytic-kinetic photometry. Experimental results reveal that this method is accurate enough. The contents of Se in oyster produced in Bohai sea is 0.63μg/g with a standard deviation 0.02μg/g and a variation coefficient 3.52%. Dietetics analysis indicates that taking 160g （wet weight） of this kind of oyster could provide sufficient quantity of Se requirement for an adult every day.
