The academic circle has long been debating over whether “soup” and tea is the same thing, but they refer to different things according to Quan Song Ci. Both “soup” and “hot water” do not belong to tea, and the three are all drunk after diner. This presents the details of the life style in the Song dynasty and its doctrine of keeping in good health: drink tea at the end of the dinner to alleviate hangover. This was not enough and people also drank “soup” and “hot water”made of sweet and fragrant herbs. Poets often combine tea and “soup” in the same poem. Offering tea is meant to keep a visitor, while offering “soup” means seeing a visitor off. “Soup” and tea are made of different materials. “Soup” is made of different kinds of fragrant herbs. “Soup” is a health-care soup. There are detailed categories of “soup”in Quan Song Ci: zizhi soup, yugan soup, changsong soup, chengxiang soup, fusangshen soup, doukou soup, zisu soup, pollen soup and honey soup. “Soup” is always drunk after tea. There are reasons for that. Tea has many advantages, but its cold and bitter nature should not be ignored. Therefore, drinking different soups of a hot nature after tea can counteract the cold and bitter nature of tea. Besides, this arrangement can make the banquet more diversified and fun. All in all, “soup” is fragrant, sweet or bitter, hot in nature, used to see a visitor off and so it is different from tea. Evidences can be found in the literature of the Song dynasty. This custom was also popular in the Yuan Dynasty, It comes down even to the present time. Drinking “hot water” is very much similar to “soup”. Poets who composed poems of “soup” didn't make poetry of “hot water”, but they created poetry of tea.“Hot water” is called “soup” by some poets. In banquets, tea is also followed by “hot water”. The material of “hot water” is similar to that of “soup”, Categories of “hot water” are also recorded in detail in Quan Song Ci: xilin
