摘　　要：本文主要对影响真空浸渍的各因素进行了研究及理论分析,通过实验确定了最佳的真空浸渍工艺参数及真空浸渍蒸煮条件,并对两种蒸煮方法的工艺参数及结果进行了比较分析。In the study authors researched the key influencing factors of vacuum-impregnation and discussed these factors in theory. At the same time author optimized the parameters of vacuum-impregnation and cooking process through the maximum variation experiment. Furthermore the paper gave comparison of the parameters and properties of the two processes.
