摘 要:介绍了非营养甜味剂———三氯蔗糖的结构、性能、制备方法、应用和发展前景。对三氯蔗糖的制备方法作了详细的综述,且对具体的合成路线作了比较:全基团保护法反应条件温和、后处理简单,但路线长,原料成本高;酶-化学联合法专一性强、污染小,但发酵成本高、中间体分离困难;单基团保护法中原料经济易得、选择性高、合成路线短,是目前最具有发展前景的工艺。The structure, performance, methods of preparation, applications and development trends of sucralose are introduced. Especially, the methods to synthesize sucralose are described in detail and compared with each other. The advantages of per-protection reaction are mild condition and simple operation but its disadvantages are too long reaction course and too high cost of raw materials. The advantages of enzyme-chemical synthesis are high enzyme specificity and low pollution of organic solvents, but the disadvantages are too high cost of zymolysis and difficulty in separating intermediates. The advantages of the mono-blocked method are cheap and readily available raw materials, high selectivity and short reaction course. This method is most suitable for the preparation of sucralose in commercial scale.
