摘 要:在70℃水浴搅拌和维持pH 7.0的反应条件下,以当归中提取的粗多糖与三氯化铁为底物合成当归多糖铁配合物(APIC).结果表明,APIC为黄棕色粉末状化合物,不溶于甲醇、乙醇、乙醚等有机溶剂,易溶于水且水溶液呈中性;APIC溶于水后,水溶液中无游离铁(Ⅲ)存在,在pH值6~12范围内此配合物不沉降、不水解,稳定性高;采用抗坏血酸还原,APIC中的配位铁(Ⅲ)在4 h内基本溶出,并测定该配合物的铁含量为16.5%.APIC有望发展成为高生物利用度的营养型补铁剂.The synthesis of Angelica polysaccharides - iron ( Ⅲ ) complex (APIC) has been carried out using FeCl3 and Angelica polysaccharides at pH 7.0. The results showed that APIC was yellow brown powder and difficult to be dissolved in methanol, ethanol, aether, etc., but easy to be dissolved in water and its solution presented neutrality. APIC was stable without precipitation and hydrolysis at pH 6- 12. The ferric ions of APIC were basely dissolved out in 4h and the iron content is 16.5% by ascorbic acid deoxidization. APIC would be expected to become iron- supplementary nutrition with higher bioavailability.
